Sugar Free Ginger Spice Cake Recipe

For those of you who live in the UK, this is a cake version of Fox's Ginger Crunch Creams Biscuits! Gingery, spicy, creamy, delicious. You can cut down the preparation time by cooling the cake and the frosting in the fridge.
First, whisk the eggs, honey, vinegar and butter together. I melt the butter for a few seconds in the microwave.
Then add in your spices - mostly ginger, with a dash of cinnamon and nutmeg. If you like, you can substitute 1 tablespoon of dried ginger powder with finely grated fresh ginger for extra zing.
Whisk until smooth and scrape into your greased and floured cake tins.
Bake for 20 minutes and allow to cool. If I'm short on time, I cool them in the fridge so I can frost them faster.
Now for the ginger buttercream frosting! This is so simple and light, it can be flavoured in many delicious ways but this time I added 1 teaspoon of ginger powder.
A lemon version of this buttercream frosting is used in my sugar-free lemon cake recipe.
I also think a lime mascarpone cheese frosting could work well with the spiced ginger flavours, similar to the one I used in the lemon and poppy seed loaf cake recipe. Lime and ginger!
Briskly whisk the flour into the milk and then whisk it into the honey in the pan. Continue whisking over a low heat until thickened up.
Now it needs to cool down before we whisk it into the butter, I pop it in the fridge for a few minutes.
It's important to mention that the butter does need to be at room temperature otherwise the frosting mix won't work. If your butter is too cold, microwave for about 15 seconds but be careful not to melt it!
Whisk the butter first, then add a spoonful of the thickened flour mix at a time, whisking until combined. Lastly whisk in the ground ginger. You'll end up with a super light smooth icing / frosting. This frosting recipe also pipes beautifully.
Spread half on the lower layer of your cake, add the top layer and decorate with the rest of your ginger buttercream frosting!
Indulgent, comforting rich flavours and also healthy for diabetics as the only sweetener in this no sugar cake is honey, which many diabetics can enjoy a little in moderation!
This ginger cake is lighter than a traditional Jamaican ginger cake but the flavours are reminiscent. I hope you enjoy it :)

INGREDIENTS
- 150g melted butter
- 100g honey
- 3 large eggs
- 180g self-raising flour
- 1 tsp baking soda
- 1 tsp white vinegar
- 2 tbsp ground ginger
- 1 tsp cinnamon
- 1 tsp nutmeg
- Buttercream frosting:20g flour
- 70g honey
- 100ml milk (dairy or oat)
- 100g butter at room temp
- 1 tsp ground ginger
RECIPE METHOD
- First make the cake batter - whisk butter, eggs, honey and white vinegar
- Add spices, flour and baking soda, combine thoroughly
- Scrape into 2 x 18cm cake tins and bake at gas mark 5 (190c / 376F) for 20 minutes, allow to cool
- For the frosting: Whisk milk and flour, add to pan with honey, simmer until thickened, allow to cool
- Whisk room temperature butter, add a spoonful of the flour mix at a time and whisk in, then add the ground ginger and whisk again
- Sandwich cake with 1/2 the buttercream, spread the rest on top!
