  • 150g melted Butter
  • 100g Honey
  • 3 large eggs
  • 180g Self Raising Flour
  • zest of 1 lemon
  • 1 tbsp poppy seeds
  • 1 tbsp lemon juice
  • Frosting:1 tbsp lemon juice
  • 75g Honey
  • 200g Mascarpone cheese


  • Pre-heat oven to gas mark 5 (190c/375F)
  • Whisk together butter, honey, eggs and lemon juice
  • Add flour, poppyseeds and the lemon zest, combine thoroughly
  • Scrape into your loaf cake tin and bake for 45 minutes (or 20 minutes if using 2 smaller round cake tins) until a skewer comes out clean
  • When cool, whisk mascarpone, honey, and lemon juice and spread evenly over your cake
