INGREDIENTS

  • 50g self-raising flour
  • 50g rolled oats
  • 100g sultanas
  • 50g walnuts
  • 2 bananas
  • 40g vegetable oil
  • 50g yogurt
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp cinnamon

RECIPE METHOD

  • Stir together the whisked egg, mashed banana, yogurt and oil until fully combined
  • Add the sultanas, walnuts and cinnamon, stir again
  • Finally stir in the flour, oats and baking soda thoroughly and divide into 8 muffin cases
  • Bake for 30 minutes on gas mark 5 (190c/375F)
