I have been hankering after a sugar free chutney recipe for ages!

I was missing the tangy spicy sweet zingy flavour with my cheese and crackers.

This took a few attempts, the recipe is already quite naturally sweet from the slow-cooked carrots, tomatoes and balsamic vinegar, but for the right kind of sweetness I used honey.

I did try to make this chutney recipe with dried stevia, it's still nice but didn't have quite the right warm pickle-chutney flavours we love.

Dice everything up really small, around half a centimetre in size so you get the traditional chutney texture.

This is perfect simmered for around an hour, keep the lid on and stir it a few times during the cooking time so your carrot chutney doesn't dry out or catch on the bottom of the pan.

INGREDIENTS

  • 200g Carrot
  • 200g Onion
  • 500g Tomatoes
  • 4 Garlic cloves
  • 2 Chillies
  • 1 tsp ground Ginger
  • 1 tsp Paprika
  • 4 Cardamom pods
  • 100g Honey
  • 150ml Red wine vinegar
  • 6 tbsp Balsamic vinegar

RECIPE METHOD

  • Finely dice the carrots, onions, garlic, chilli and tomatoes
  • Add everything to a pan and simmer, covered for 1 hour, stirring every so often
  • Pick out the cardamom pods and allow to cool before serving
