INGREDIENTS

  • 1 Onion
  • 10 Cloves of Garlic
  • 2 Fresh Chillies
  • 1 tbsp Olive Oil
  • 10 Sprigs Thyme
  • 3 Sprigs Rosemary
  • 25g Fresh Coriander
  • 10 Bay Leaves
  • 1 tsp Cumin Seeds
  • 2 tbsp Fennel Seeds
  • 2 tbsp Smoked Paprika
  • Zest and juice (200ml / 1 cup) of 2 Oranges
  • 50g Honey
  • 6 tbsp Balsamic Vinegar
  • 200g Plum Tomatoes
  • 4 tsp Yellow Mustard Sauce
  • 200ml (1 cup) Pineapple Juice
  • 1 tbsp Tomato Paste
  • 1 tbsp Whisky
  • 250ml Water
  • 1 tsp Salt
  • 1 tsp Pepper

RECIPE METHOD

  • Sauté onion, garlic and chilli in olive oil until transclucent, add the spices and orange zest and fry another minute
  • Add the water, tomatoes, juices, herbs, vinegar, mustard, honey, salt and pepper, bring to a boil then reduce and simmer for 40 - 50 minutes
  • Pull out the bay leaves and rosemary stalks, allow to cool slightly then blend until smooth
