We love walnuts and dates in anything! Cakes, cookies, scones, snack bars - they are all a healthy and delicious dates and walnuts recipe. Then the addition of coconut oil and oats makes a beautiful combination.
This nut cookies recipe can easily be made gluten-free by substituting the wholewheat flour for your favourite gluten-free flour, as many with a gluten intolerance can still eat oats.

First melt the coconut oil, I usually do this by blasting on the microwave for 30 seconds until melted enough.

Then I put the bowl on the weighing scales and pour in the honey - saves on the washing up!

I chopped the walnuts fairly finely - about 1/2 cm pieces. These cookies would be delicious with chopped almonds too and I imagine any nuts would swap out easily or put in half and half.

Stir the walnuts, oats, dates and flour into the honey coconut mix until you have a sticky dough.
This cookie dough is too soft to roll out so just take a dessert spoonful at a time and flatten into a circle on your baking sheet. They need to be less than a cm thick, about 3/4 of a cm is perfect.

When the cookies first come out of the oven, they are extremely soft so resist the urge to immediately try and eat one! They will fall apart :)
Allow to cool for about 10 or 15 minutes then enjoy with a coffee or tea!

These walnut date cookies are crispy when you bite into them and chewy from the dates. I used ready chopped dates but this recipe would be amazing with Medjool dates too.

INGREDIENTS
- 100g oats
- 100g wholewheat flour
- 100g coconut oil
- 100g honey
- 100g chopped dates
- 50g chopped walnuts
RECIPE METHOD
- Melt coconut oil and whisk in the honey
- Add in the flour, oats, walnuts and dates, combine thoroughly and spoon onto a non-stick baking tray, spreading about 3/4 cm thick
- Bake for 15 minutes at gas mark 7 (220c / 425F)
- Allow to cool completely before serving and eating

I used mixture of rice flour, ground almonds, dedicated coconut, 1tsp baking powder and 1tsp vanilla extract and 1 beaten egg. Also mixture of butter and coconut oil with the honey Baking time and temp is exact. Absolutely delicious!
