INGREDIENTS

  • Zest of 1 lemon
  • 1 tbsp Lemon juice
  • 100g Butter
  • 65g Honey
  • 2 Eggs
  • 120 g Self raising flour
  • 1 tsp Baking Soda
  • Frosting: 250g Cream cheese or Mascarpone
  • 1 tbsp Lemon juice
  • 50g Honey

RECIPE METHOD

  • Preheat oven to gas mark 5 (190c / 375F)
  • Whisk together lemon zest, 1 tbsp lemon juice, butter, honey and eggs, then add flour and baking soda, whisk until combined
  • Scrape into 12 bun cases, bake for 20 minutes
  • For the frosting, whisk together cream cheese, 1 tbsp lemon juice and honey, then pipe or spread onto the cooled cupcakes
