For the perfect granola texture, we use big, traditional jumbo rolled oats, creating thick, tasty, heart-healthy clusters. Pecans and walnuts add protein and a satisfying crunch, while cinnamon and nutmeg contribute warm winter spice. A dash of salt enhances flavours, and pumpkin and sesame seeds provide both texture and nutritional benefits.

Olive oil adds crunch to the granola while keeping it low in saturated fats. For sweetness without refined sugar, honey and dried stevia leaf are key ingredients. Stevia, a natural sweetener, adds a fresh sweetness without the artificial taste of processed sweeteners.

A touch of vanilla extract brings all the flavours together, creating a delightful mixture. Even spreading on a high-sided baking tray ensures uniform toasting, and stirring during baking guarantees a crispy texture. For those who prefer clusters, pressing down on sections before baking yields crunchy clumps.

Once baked to a golden brown, allow the granola to cool completely to achieve optimal crispiness. For a muesli-style granola, leave it as is; for clusters, press down before baking and break apart after cooling. Customize your granola by adding organic dried fruits like raisins and cranberries, enhancing the overall flavour profile.
