  • 1 Large Organic Egg
  • 1 Cup (250ml) Vegetable Oil (Sunflower or Rapeseed Oil)
  • 2 Teaspoons Cider Vinegar (Or White Wine Vinegar)
  • 1/2 tsp Salt


  • Find a tall jar or container that will fit a stick blender/immersion blender inside, and has a lid that can be screwed on
  • Break the egg into the jar, add the vinegar and salt, then the oil
  • Put the stick blender inside all the way to the bottom of the mixture, switch it on and blend for 20 seconds, keeping the blender still until you see thickening
  • Gradually and carefully blend until all the oil is combined and an obvious mayonnaise texture has been created
  • If it doesn't work out, don't worry, just add another egg, allow to settle and repeat the process - you will still have mayonnaise but it won't be quite as thick
  • If the mayo is too thick, add a teaspoon of water at a time and blend until the texture is right
  • Enjoy! Keeps in the fridge for up to 2 weeks

I made this using my 200W hand blender (£4.75 @Asda) & a jam jar i had that's wide enough for the blender wand to sit in. I've seen mayo made with a hand whisk in a mixing bowl: you add the oil A VERY LITTLE AT A TIME while whisking. Don't rush it.

Hi Karen, thank you for your message. It won't work with a hand whisk but a normal blender could possibly work if you let the ingredients settle around the blade before you turn it on. Let me know how it goes if you try it!

I don't have an immersion blender. How else can I blend this?
