Apple Carrot and Banana Muffins
Moist and healthy muffins jam-packed with fruit and vegetables - carrot, apple and banana! Great as breakfast muffins or as a healthy snack - no sugar!
These delicious moist apple carrot and banana muffins are packed with fruit and veg. There is no added sugar, all the sweetness comes from the fruit making them ideal for diabetics!
We added filling oats too to make these more substantial. If you're having them for breakfast, each one is only 106 calories and 3 muffins is pretty satisfying!
First we mash our bananas and grate the apple and carrot, I grated the carrot on a fine grater so it would cook well.
We used oil and yogurt for a light crumb, the yogurt activates the baking soda.
Mix the dry ingredients together - the oats, flour, cinnamon and baking soda, making sure the soda is thoroughly combined.
Then stir them into the wet ingredients. The baking soda starts working straightaway so don't leave the mixture hanging around at this point.
Scoop into muffin cases, and bake for 35 to 40 minutes until springy and firm to the touch.
I divided mine into 12 so they are a healthy 100 calorie snack, but if you would like bigger muffins then divide into 10 or 8, but you'll need to bake them a little longer.
These diabetic breakfast muffins are moist! The sweetness is subtle and it's enhanced more by the cinnamon.
If you don't want to use cinnamon, then nutmeg or ginger powder would also be delicious in these muffins.
You can make these muffins even more healthy by using wholemeal flour if you like!
They will happily keep for 3 days in a sealed container, just make sure to fully allow them to cool before storing.

INGREDIENTS
- 75g Self-Raising Flour
- 75g Rolled Oats
- 100g Grated Apple
- 50g Grated Carrot
- 2 Mashed Bananas (180g)
- 40g Vegetable Oil
- 50g Yogurt
- 1 Egg
- 1 tsp Baking Soda
- 1 tsp Cinnamon
RECIPE METHOD
- Preheat oven to gas mark 5 (190c / 375F)
- Mix the mashed bananas, grated apple and carrot together
- Add the oil, yogurt and egg, combine thoroughly
- Mix the flour, oats, cinnamon and baking soda then stir into the wet ingredient mix
- Divide into 12 muffin cases and bake for 35 to 40 minutes until firm but springy to the touch
