These lovely intolerance-friendly chocolate truffles are wonderful to make as a gift, or to keep in the fridge for a little chocolate treat whenever you *need* one.

There are plenty of ways to adapt this recipe:

If you can't get hold of vegan butter or dairy free butter, then coconut oil will work well too.

If you did want to use regular milk and butter this recipe will still be delicious and gluten free! I also tried oat milk and it worked great.

If you want to use 100% dark chocolate for this recipe, just sub the cocoa butter and cocoa powder for 80 grams of darkest sugar free chocolate. Chop or grate the dark chocolate then pour on the hot milk, stir and very gently heat until combined.

Sometimes I have bought cocoa butter that comes in little buttons, but this time it came in a block so it's easiest to grate it with a box grater to melt it in the microwave.

Otherwise you can melt it in a pan over a *very* low heat.

It's important to follow the steps as I mentioned, combining the fats first, pouring on the hot milk and adding the cocoa powder at the end to make sure the mix doesn't separate.

It takes a little whisking to fully mix the cocoa powder in, but just keep going and you'll be rewarded with a silky-smooth thick chocolate sauce!

Then we just need to chill it in the fridge until solid enough to roll into chocolate balls, for me it took about 1 hour.

This recipe makes about 16 truffles, when using a teaspoon to scoop the chocolate mix. Only 58 calories each!

Dust each little truffle in cocoa powder and you are all done!

INGREDIENTS

  • 40g Cocoa butter
  • 30g Vegan butter
  • 50ml Nut milk
  • 40g Honey
  • 1 tsp Stevia powder
  • 40g Cocoa powder (and extra for dusting)

RECIPE METHOD

  • Add grated cocoa butter, vegan butter and hot nut milk to a bowl, stir
  • Heat in microwave for 30 seconds until melted enough to whisk and combine
  • Stir in honey and stevia, when mixed, whisk in the cocoa powder until completely smooth
  • Chill for 1 hour in the fridge until the consistency allows you to take teaspoons of the mixture and roll into balls
  • Dust with extra cocoa powder and chill
