  • 1 Egg
  • 70g Honey
  • 55g Butter
  • 1 tsp Cornflour


  • Zest and juice the lemon
  • Add egg to pan, whisk and add the lemon zest, juice, cornflour, butter and honey
  • Whisk while heating gently over a medium-low heat for 8 minutes until thickened
  • Reduce the heat to minimum and continue to whisk for 1 minute
  • Remove from heat and pour into a jar
