Sugar Free Honey and Oat Cookies Recipe
Healthy oatmeal cookies with no sugar, it's easy to make these sugar free oat biscuits, they are crispy and delicious!
Here's the final oatmeal cookie recipe with honey instead of sugar, this is around the 7th iteration! I decided to share this version of the biscuits because it has the best crispiness result, which can be difficult when you can't use refined sugar to get the caramelisation.
Although this recipe for oatmeal cookies is made with honey, if you're ok with maple syrup or agave nectar it will work with these too, but I love the honey and coconut aroma together with the oats, it is so comforting.
I used half oats and half wholewheat flour because the biscuits hold together much better.
The cookie dough is actually quite wet, but don't worry these oatmeal biscuits really do crisp up!
There is plenty of dough for 8 good sized cookies (there are only 6 in the photo because my tray wasn't large enough for 8).
If you make 8 cookies then each cookie will be 240 kcal, but if you did want to make 12 smaller cookies then they would only be 160 kcal each! Just reduce the baking time by a couple of minutes.
I hope you get a chance to make these cookies because the beautiful smells of coconut, oat and honey are incredible.
Huge bonus these are naturally egg and dairy free too! I did try a version using butter but the coconut oil won out the taste test hands down!
They got eaten too quickly! They are so so delicious I am constantly thinking about variations, I have some more ideas in mind! please let me know in the comments if you have any ideas :)

INGREDIENTS
- 100g (3.5 oz) rolled oats
- 100g (3.5 oz) wholemeal flour
- 100g (3.5 oz) coconut oil
- 100g (3.5 oz) honey
- 0.5 tsp baking powder
RECIPE METHOD
- Melt the coconut oil over a low heat or in the microwave, stir in the honey
- Add oats, flour and baking powder, mix well
- Take spoonfuls of the cookie dough and drop onto a lined baking tray, spreading out to about 1/2 cm thick
- Bake for 15 to 18 minutes on gas mark 7 (220c / 425F), allow to cool before eating

Baking powder and salt are two completely different compounds. Even though there is sodium in both its not the same thing and is processed differently by the body

Hi Ann, thank you I have corrected the nutritional info, I must have missed out the baking powder. I haven't tried these without it but I think it might work, please let me know if you try it!

Really keen to make these using coconut oil/agave syrup. Question: Do you need baking powder? Nutritional info says 0% salt but baking powder is really high in sodium
