First we sauté onions until translucent for a great flavour base!

If you use tinned plum tomatoes, there's no need to chop them, just break them apart in the pan.

Then we simmer until the peppers and onions are soft and melted into the sauce, adding vinegar and lime juice at the end.

  • 1.5 tins plum chopped tomatoes
  • 1 green pepper
  • 1 small white onion
  • 1 spring onion
  • 3 bird eye chillies
  • 1 tbsp lime juice
  • 1 tbsp red wine vinegar
  • 1 tbsp tomato puree
  • 1 tsp veg oil
  • 1 tsp salt
  • 1 tsp black pepper


  • Finely chop onions, peppers and chillies, 1 chilli = mild, 2 chillies = medium, 3 chillies = hot salsa
  • Fry onions until translucent, add tomatoes, peppers, spring onion and chillies, heat up then reduce to a low heat and simmer for 20 minutes
  • Add vinegar, lime juice and tomato puree, simmer until the peppers are cooked, another 10 minutes
  • Allow to cool before serving, keeps for 2 weeks in the fridge
