Pork Steaks With Apples And Onions
Pork with apple and onion is an iconic combination. We bake these in foil to keep them juicy then remove to crisp up the fat!

We added garlic and oregano, and sautéed onions to ramp up the flavour.

If you don't have oregano to hand, you can substitute with thyme or sage.

Season the pork with salt and pepper on both sides. You can do this a couple of hours before if you get chance.

I like to chop the onions thinly so they cook and melt into the onion apple gravy.

Lightly browning the onions first adds even more flavour.


Spread the onions out over the base of your pot or tin then add the apple pieces on top with the oregano sprinkled over.

Make sure you remove all of the apple core!

Lightly brown the pork and balance on top so that the fat isn't submerged in the liquid. This will help the fat to render out so you'll have a crispy edge :)

Adding some stock means we end up with a delicious pork and apple gravy. If you have apple juice, using that instead of water results in even more intense taste. I tend to use Marigold Vegetable stock which is sugar free and easy to find in the UK, but any vegetable or chicken stock will work, and if you're using apple juice then you can even skip the stock powder.

Blast in the oven for an extra 10 minutes without the foil or lid lets the fat crisp up even more, while the pork itself is still super juicy.

Serve up your delicious pork loin steaks with mashed potatoes and carrots or broccoli!

INGREDIENTS
- 4 pork loin steaks or chops (~750g) 1 onion sliced
- 1 apple peeled and cubed
- 2 garlic cloves crushed
- 1 tsp Oregano
- 1 tsp vegetable stock powder
- 100ml water or apple juice 1 tsp cornflour
- 1 tbsp vegetable oil
- Salt
- Pepper
RECIPE METHOD
- Season pork steaks with salt and pepper on both sides
- Line a tin with foil or use an oven dish with lid
- Sauté the onion and garlic on a medium heat in a skillet until browned slightly, put into the tin covering the bottom, add the chopped apple and oregano, you can also optionally add in some carrots at this point
- Pour in the water or juice mixed with stock and cornflour
- Brown the pork steaks on both sides then place on top of the onions, layering so the fat edge is highest and not in the liquid
- Cover with foil and bake for 35-40 minutes, remove foil or lid and bake for another 10 minutes to crisp up the fat
